Using Storage Mode

Storage Mode pauses microbial activity to keep your starter safe without feeding.

Use it when you don't bake every day, or when you can't tend your starter for a while because of a holiday or trip. It holds a steady cold temperature so your starter doesn't spoil.

How to start

Turn the dial to Storage Mode and press the button. The screen shows the time elapsed since storage started. Quick Mode and Delayed Mode also switch to Storage Mode automatically when they finish.

Store it without feeding for up to 14 days.

You can store it for up to 21 days, but the top of the starter may dry out. We recommend taking it out and feeding it within 14 days.

Using it again

  • To bake with a stored starter, you must refresh (feed) it.
  • The longer it was stored, the longer it takes to wake up.
  • Check its condition before baking and feed it at least 1–2 times to restore activity.
