Using Delayed Mode
Delayed Mode is a scheduled fermentation mode that helps your starter reach its peak at the time you want.
It predicts the time left to peak based on your starter's fermentation pattern and runs fermentation to match your schedule. For example, if you plan to mix dough in 12 hours, you can set it so your starter peaks in about 12 hours.
How to start
Turn the dial to Delayed Mode, press the button, then set the target time for your starter in hours and minutes. Turn the dial to change values and press to select.
Always use cold water when you feed.
What happens
- After setup, it waits in a chilled state. The screen shows a countdown to completion and the rise.
- It starts heating to meet your target time.
- Once the height passes 2x, it turns into a green solid line.
- When the scheduled time ends and the peak has passed, it switches to Storage Mode automatically.
Good to know
- At first it predicts time from default values, and it learns your starter's pattern to become more accurate over time.
- Before your first use, run Quick Mode or Delayed Mode at least once.
- Skipped feedings, long storage or a big change in feeding ratio can affect accuracy. Keep your ratio and routine as consistent as possible.
- For schedules under 7 hours, Quick Mode is recommended.
Core fermentation AI
In Quick Mode and Delayed Mode, the core fermentation AI built into the device watches the starter's height, detects doubling and the peak, and switches to Storage Mode at the right time. It is different from Talk with Starter, the conversational AI in the app, and works without the app, internet or a subscription.
