Using Quick Mode

Quick Mode is a fast fermentation mode that brings a freshly fed starter to its peak as quickly as possible, for when you want to bake today.

It holds the temperature where the microbes in your starter are most active, so the starter rises quickly at its natural pace.

How to start

Turn the dial to Quick Mode and press the button to start. To stop, press and hold the button for 2–3 seconds.

What happens

  1. Heating quickly activates the starter. The screen shows the rise from the starting height (from x1.0) and elapsed time.
  2. Once the height passes 2x, it turns into a green dotted line.
  3. At the peak window, best for feeding or baking, the dotted line turns solid.
  4. After the peak, when the height starts to fall, it switches to Storage Mode automatically and shows the time to peak at the bottom of the screen.

Good to know

  • Time to peak varies with your starter's condition.
  • A starter from the fridge takes longer to wake up.
  • A very active starter kept at room temperature may rise faster than expected and over-ferment.
  • Check the height on the screen or in the app so you don't miss the peak.

Core fermentation AI

In Quick Mode and Delayed Mode, the core fermentation AI built into the device watches the starter's height, detects doubling and the peak, and switches to Storage Mode at the right time. It is different from Talk with Starter, the conversational AI in the app, and works without the app, internet or a subscription.
